<p>In a <a href="http://www.chiropracticlifeblog.com/eat-your-greens-especially-cruciferous-veg/">recent post we talked about the health benefits of cruciferous vegetables</a> which are rich in antioxidants and help protect our body’s cells from damage.  This week I discovered the following recipe which not only packs a perfect healthy punch, but is also extremely delicious.  Now that the weather has turned a little cold (a bit too soon for most of us!) having a good soup on standby is the perfect solution for a quick, nutritious meal.</p>
<p><strong>Cream of Cauliflower and Broccoli Soup</strong></p>
<ul>
<li>2 Medium red onions &#8211; finely chopped</li>
<li>2 large clove garlic &#8211; finely chopped</li>
<li>half teaspoon dry English mustard powder</li>
<li>1 cauliflower</li>
<li>1 head of broccoli</li>
<li>2 medium potatoes &#8211; peeled and cubed</li>
<li>Enough stock to generously cover the vegetables</li>
<li>1 tablespoon of wholegrain mustard</li>
<li>sea salt and fresh ground black pepper</li>
</ul>
<p><strong>To Serve</strong><br />
Coarsely grated mature cheddar<strong> </strong></p>
<p><strong>Preparation:</strong></p>
<ol>
<li>In a large saucepan smelt the butter and add the onion, cooking slowly until translucent.  Add garlic over low heat being careful not to burn.  Stir in the mustard powder.</li>
<li>Prepare cauliflower and broccoli into florets and steam until almost tender.  Add to the onion and cover with the vegetable stock.  Add the potato and bring to the boil.  Simmer for 15 minutes or until the potato is cooked.</li>
<li>Puree the soup and add the wholegrain mustard and bring back to the boil, reducing the heat and simmer for further five minutes.</li>
<li>Serve in bowls sprinkled with the grated cheese, sea salt and fresh ground pepper.</li>
<li><em><strong>Note</strong></em>:  I used the vegetable water from steaming the cauliflower and broccoli and had previously cooked the potatoes (in their skins) and used this water too.</li>
<li>Please note that using <a href="http://www.chiropracticlifeblog.com/salt-friend-or-enemy/">unrefined, untreated (looks grey or brownish) full spectrum sea salt</a> you are adding more minerals to your soup &#8211; therefore it will be much more nutritious.  Table salt at best has two minerals &#8211; unrefined, untreated has 84 different minerals.  Interestingly, the flavour from unrefined and untreated sea salt is delicious!</li>
<li>All organic vegetables were used to make this delicious soup and organic cheese to serve.</li>
<li>To make the stock I used Kallo Organic Vegetable Stock Cubes and A. Vogel Organic Herbamare &#8211; herbal seasoning salt.</li>
</ol>

<p>Lentils contain high levels of proteins, including the <a title="Essential amino acids" href="http://en.wikipedia.org/wiki/Essential_amino_acids">essential amino acids</a> <a title="Isoleucine" href="http://en.wikipedia.org/wiki/Isoleucine">isoleucine</a> and <a title="Lysine" href="http://en.wikipedia.org/wiki/Lysine">lysine</a>, and are an essential source of inexpensive proteins.  Sprouted lentils contain levels of all essential amino acids.  While lentils are an incomplete protein in themselves, when mixed with rice (wholegrain) it becomes a complete protein.</p>
<p>Apart from a high level of proteins, lentils also contain <a title="Dietary fiber" href="http://en.wikipedia.org/wiki/Dietary_fiber">dietary fiber</a>, <a title="Folate" href="http://en.wikipedia.org/wiki/Folate">folate</a>, <a title="Vitamin B1" href="http://en.wikipedia.org/wiki/Vitamin_B1">vitamin B<sub>1</sub></a>, and minerals. Red (or pink) lentils contain a lower concentration of fiber than green lentils (11% rather than 31%), however personally I prefer dahl made with red lentils and they are also much quicker to cook.  <em>Health</em> magazine has selected lentils as one of the five healthiest foods.</p>
<p>Lentils are also a good source of <a title="Human iron metabolism" href="http://en.wikipedia.org/wiki/Human_iron_metabolism">iron</a>. This makes them an important part of a vegetarian diet, and useful in helping to prevent iron deficiency.</p>
<ul>
<li><strong>This is Damon&#8217;s Recipe:</strong></li>
<li>1 cup lentils</li>
<li>2 medium onions &#8211; chopped</li>
<li>4 cloves garlic &#8211; crushed</li>
<li>quarter teaspoon ginger powder</li>
<li>1 teaspoon cumin powder</li>
<li>lots of pepper</li>
<li>salt</li>
<li>(stock)</li>
<li>1.  Lightly fry onions and garlic until soft</li>
<li>2.  Add spices (fresh if available)</li>
<li>3.  Add lentils, cover with stock and cook until soft.  Amount of water depends on the consistency you wish to achieve. (Damon prefers it on the thin, soupy side and so do I)</li>
<li>4.  Blend</li>
<li>Serve with rice and naan and enjoy!</li>

<p>The avocado is sometimes referred to as the Alligator Pear, which is a reflection of it’s shape and the leather-like appearance of its skin.  Personally I prefer to use and eat the popular Hass variety (organic or course) and find it particularly creamy and delicious for making guacamole (featured recipe) and smoothies.  When combined with banana and other fruits avocados make delightful healthy smoothies with the addition of a little pure maple syrup for sweetener.  Use almond milk as a substitute for cows milk unless your cows milk is raw and unpasteruised.</p>
<p><strong>Avocados are a wonderful health food</strong> but have attracted a lot of bad press because of their fat content.  The use of the word “fat” is of itself unfortunate as immediately we get the impression it is something to be avoided, however, avocados should be embraced as a wonderful health food. Avocados have a high fat content of between 71 to 88% of their total calories &#8211; about 20 times the average for other fruits. A typical avocado contains 30 grams of fat, but the majority of these fats are health promoting monounsaturated fats which help to lower cholesterol naturally.</p>
<p>Avocados also make an ideal first food for infants because they have a delicate flavour and a smooth creamy consistency and because they can be eaten straight out of the outer shell.  Dr William Sears says that avocado is “one of the first fresh fruits a baby can enjoy”  It is a time-saver and is served raw.  Low in sodium and cholesterol-free, avocados contain many valuable nutrients.  “Ounce for ounce, avocados contain more potassium than forty five other fruits, juices or vegetables and they are one of the only fruits and vegetables which contain monounsaturated fats essential for baby’s development”.</p>
<p><strong>Karens Guacamole </strong></p>
<ul>
<li><strong>4 avocados</strong></li>
<li><strong>3 cloves crushed garlic</strong></li>
<li><strong>2 diced tomatoes</strong></li>
<li><strong>juice of 1 &#8211; 2 lemons</strong></li>
<li><strong>quarter teaspoon cumin</strong></li>
<li><strong>salt (best celtic sea salt)</strong></li>
<li><strong>few drops tobasco sauce</strong></li>
</ul>
<p><strong>Mash avocados roughly. Add lemon juice, crushed garlic, cumin, sea salt and tobasco and mix.  Gently add diced tomato.  Your guacamole is ready!</strong></p>
